Defrosting freezer
How often should I defrost and clean out my deep freeze? Once or twice a year or more often than that? Any tips to not make it last all day would be appreciated.

Once a year is plenty -- unless you see significant buildup (ice more than a 1/4 inch thick).
There are several ways to speed up the process, but the most tried and true is to place a fan pointing in the freezer and get warmer air circulating, allowing that cold air to escape quickly. Should only be about 15-20 minutes before the ice is ready to be easily scraped away.
Don't forget to turn off your freezer as well as place some towels down to minimize cleanup.
